Can there ever be a better expression of terroir than this special release mead?
The bees foraged in the private forest & surrounds of our farm during the early summer of 2016. The raw honey was then blended with water from the River Derwent flowing past our front gate.
A spontaneous ferment in old wood oak barrels ensued for the following 3 years – long, slow and complex.
The bottles were spontaneously conditioned with the addition of raw honey and the result is sparkling and celebratory!
Forget the stereotype of mead from yesteryear!
Our brew is instead dry with delicate & floral honey aromatics. Light straw in colour, exuberantly sparkling & with a dry finish on the palate.
This beverage is dry enough for aperitif yet aromatic, complex & flavoursome enough to be served at the table.
